How to Sharpen a Fillet Knife with the RSHD-1

1. Hold the sharpener firmly in one hand with the coarse side facing up

2. Draw the blade across the coarse ceramic at a consistent 20 degree angle

3. Make 2-3 passes on the coarse side

4. Flip the sharpener to the fine ceramic side

5. Make 2-3 passes at the same angle to hone the edge

6. Test sharpness on paper or by gently pressing your thumbnail against the edge
