Built for the Fish That Break Other Knives

How to Break Down Large Fish with a Scimitar

  1. Lay the fish on a stable cutting surface
  2. Cut behind the gill plate and pectoral fin down to the backbone
  3. Use the 11" blade to make one long sweep along the backbone to the tail
  4. Flip the fillet and remove rib bones with the tip of the blade
  5. Skin by running the blade between flesh and skin in a single pass
  6. Rinse, dry, and return the knife to its sleeve
